Urban Bistro at ICA Kvantum Skövde – A shared food journey

When ICA Kvantum supermarket in Skövde built its Urban Bistro restaurant, they weren’t satisfied to just put up a sign that said, “Apologies for the mess, we’re rebuilding.” Instead, they created opportunities for customers to be involved and follow the entire process.

We felt that if we’re going to open, let’s really open! Let’s make it a big event. So we rolled out the red carpet, had some great special offers, and toasted the new bistro with our customers.

“Customers feel that this is their supermarket. So they should also feel that we’re doing the rebuilding together,” says Martina Andersson, Store Manager.

Working with Intrx, ICA Kvantum in Skövde has created Urban Bistro, a street-food restaurant with inspiration from London. As soon as the ground was broken, the store created social media accounts where customers could follow the construction process.

“We also made a few peepholes at the entrance, so customers could look inside and feel like they were part of the process,” Martina explains.

The Urban Bistro location was previously a warehouse and a space for dealing with deposit bottles and cans, and this posed some challenges when building the restaurant kitchen.

“We’ve never had water, grease traps, ventilation and that kind of thing here, so it hasn’t been easy. But I think we’ve solved it well. Our tradesmen and Intrx have kept in direct contact with each other and sorted these problems out along the way,” says Martina.

When Urban Bistro opened in October 2020, ICA Kvantum noticed the great sense of involvement they had managed to create among customers.

“We felt that if we’re going to open, let’s really open! Let’s make it a big event. So we rolled out the red carpet, had some great special offers, and toasted the new bistro with our customers. And we had a huge rush the first two weeks, we lived on that for a long time,” Martina Andersson concludes.
