We started off by producing a detailed plan of the kitchen’s layout, including the flow and furnishing. Based on this, we then analyzed staff efficiency. We looked at everything from the distances staff needed to walk to do their jobs, to the flow of each product from arriving at the restaurant to being served to the customer. We also produced 3D drawings to visualize what the restaurant would look like in finished form. There was great emphasis on creating a space that exudes health and a healthy lifestyle, in line with Fresh Foods’ green colour palette.
